Banana Pecan Cake

1/2 cup shortening
2 eggs
2 cups sifted cake flour
1/2 tsp salt
1/4 cup buttermilk
3/4 cup chopped pecans
1 1/2 cup sugar
3/4 cup mashed bananas
1/4 tsp baking powder
3/4 tsp baking soda
1 tsp vanilla

Cream shortening. Add sugar, gradually. Cream well. Add eggs, one at a time, beating thoroughly, after each addition. Add bananas.

Sift together flour BP, soda and salt. Add alternately with buttermilk, to which vanilla has bee added. Stir in pecans.

Pour into 2 greased 9" cake pans and back 30-35 min. at 350 degrees. Remove from pans and cool. Frost with banana frosting.


Sounds wonderful! If there is a recipe for banana frosting, it isn't on this card.
