Carrot Cake

1 1/2 c. salad oil
2 c. sugar
Sift together and add to above:
2 c flour
1 t salt
2 t soda
2 t Baking powder
2 t cinnamon
Add: 3 cups grated carrots & 1 cup chopped nuts
Bake 350 degrees

Frosting:
1 pkg cream cheese
1 lb powdered sugar
2 tsp vanilla
dash salt
1/4 c margarine


I remember eating this particular recipe quite a bit. The recipe card says from Nancy (mom). I have had it quite a few times at home. I actually remember eating this at Grandma's house on High Street. Not sure why, but it is a brief memory I have - eating this amidst the crowd of extended family getting together for that day.

  1. I love carrot cake. I think this is the recipe I also have. I prefer my carrot cake without raisins and pineapple which many have. I love this frosting!!

  2. I used to like carrot cake ~ it just isn't the same without cream cheese frosting.
