2 c cooked brown rice
1 cup unsweetened crushed pineapple
1/4 c raisins
3/4 c hot water
1/2 c clean raw cashews
1 ripe banana
3 T orange juice concentrate
1 t vanilla
1/2 t almond extract (optional)
Mix 1st 3 ingredients in 8x8 casserole dish
Blend remaining ingredients until smooth
Bake at 350 for 45 min. serve hot.
Garnish with peach or banana slices
Not being a morning person, the odds of making this for breakfast in my house are slim. Sometimes, it is nice to have breakfast for other meals though. This dish looks like it is packed with nutritional value.
this is one I would want someone else to make and let me just taste it...doesn't sound too good to me :-/
