Peanut Brittle

1 c raw peanuts                
1 c sugar                           
1/2 c corn syrup               
1/8 t salt
1/2 c corn syrup
1 t vanilla
1 t baking soda

Combine first four ingredients in a 2 quart bowl. Stir and microwave on high for 5 min.  Stir well & cook 3 1/2 minutes more.  Add butter & Vanilla and cook 1 min on high. Peanuts will be browned & syrup very hot.  Add soda & stir gently until light & foamy.  Pour on a greased sheet - aluminum foil, shiny side up.  Chill.  When hard, crack into serving pieces and store in a tight covered container.

So much easier, well at least less time consuming, than standing over a hot pot stirring until the right candy temperature is reached.   Another good one for gifting.   Tie a cute ribbon on a bag, or decorate a jar.
