Fresh Green Pea Soup

10 oz pkg frozen peas or 2 cups fresh peas
2 c water
1 c boiling water
1/4 cup clean raw cashews or blanded almonds
1 tsp onion powder or small piece of onions
1 tsp salt

Add peas to boiling water - bring to 2nd boil. Cook 1-2 min. Blend cashews in 1/2 c of remaining water until smooth. Add cooked peas with water - seasoning with rest of water gradually. Blend until smooth and creamy.

  1. This is wonderful and you can also use other vegetalbes instead of peas. For instance you can substitute corn or asparagus. Just make sure you blend it throughly. Nancy
