Cottage Cheese Loaf


5 eggs
1 large onion
1/4 pound oleo, melted
3 pkgs. George (sic) Washington Broth
1 large box Cottage Cheese
4 1/2 cups Special K or Oatmeal
1/2 cup walnut meats, chopped

Mix all together
Bake at 350 degrees.


This is a favorite of mine. It always makes a nice loaf, and afterward, makes great sandwiches! Many of my non-vegetarian friends like this one as well. I think this has been served at almost every potluck I have attended in my life. I have never made it with Oatmeal, only Special K, so cannot comment on that. In fact, I had not see the recipe with the option for something other than Special K.

The version I have made most indicates pecans instead of walnuts, but maybe pecans were just easier to come by. I have made it without any nuts too. G. Washington's broth can be difficult to find,and the name is actually G. Washington, not George Washington, although often called the other. You can substitute Lipton Onion Soup mix for the onions & G. Washington's broth. Another version of this recipe includes 1/2 cup of milk as well.

If you bake this in a glass dish, it provides a wonderful crust, just watch it as it can get over done quickly. I usually bake this for about 45 minutes, although the recipe does not provide a time to bake, only temperature.

  2. Still one of our favorites! The boys absolutely love it! Just had some the other day, then had leftovers sliced thin and put into sandwiches! Hmmm. Not sure how I got lucky enough to get leftovers, as the boys usually don't stand for that!
